Pumpkin. Pumpkin. Pumpkin.

Decorated my pumpkin for Halloween.  Since Ben is not so into holidays the past couple of years and my grandsons do not come over that often, I don’t decorate like I use to, but I really like the mice and pumpkin idea.  A bit like Cinderella instead of Halloween?  Oh well.


I cleaned my baking cabnet out and found two boxes of cake mix that expired a month and two months ago so I made two cakes today.  Pumpkin Spice cake:


Mix at medium speed one box Spice Cake Mix, 1 15 oz can pumpkin, and 3 eggs.  Pour into 13×9 baking dish and bake at 325 degrees for 40 minutes.  Sprinkle with powdered sugar and serve.


Pumpkin Angel Food Cake:


Beat 1 package Angel Food Cake mix with 1 15 oz can pumpkin and 1 tsp. pumpkin pie spice on low speed until blended then for 1 minute on medium speed.  Pour into greased fluted pan.  Bake at 325 degrees for 40 minutes.  Immediately turn onto plate.  No glass bottle needed.  Cake will not rise as an Angel Food cake would.
